Ingredients

  • 3 cups brown beans

  • 1 teaspoon salt

  • 1/2 small onion

  • 3–4 Scotch bonnet peppers (atarodo), chopped

Direction

  1. Prep The Beans
Pick the beans to remove stones, dirt, and debris.
If using peeled beans, skip to blending.

  2. Soak & Peel
Add enough water to the beans and let sit for 10 minutes.
Peel using your hands or pulse briefly in a food processor to loosen the skins.

  3. Separate The Chaff
Add water until the chaff floats.
Pour through a sieve to remove the peels.
Repeat until beans are completely clean.

  4. Soak The Beans
Soak peeled beans for 6–8 hours or overnight in the fridge (see Note).

  5. Blend The Beans
Transfer soaked beans to a blender.
Add a little water and blend until smooth.

  6. Whisk The Batter
Pour blended beans into a bowl.
Whisk with a mixer, whisk, or wooden spoon for 7–10 minutes until light and fluffy.
    Do not overmix.

  7. Add Seasoning
    Chop peppers finely.
Season batter with salt, chopped pepper, and onion.
Whisk for 1–2 minutes to incorporate.

  8. Fry The Akara
Heat oil in a pan over medium/low heat.
Scoop batter with a spoon or small scoop into the oil.
    Fry until golden brown.
For crunchy tiny bits, drop in a few mini balls and scoop them out when golden.

  9. Drain & Serve
Transfer akara to a paper‑towel‑lined plate to absorb excess oil.
    Serve hot.

Notes

Soaking beans softens them for the best texture and helps break down complex sugars that cause digestive discomfort and gas.
