Tool

  • Muffin pan

  • Mixing bowls

Ingredients

Topping

  • ½ cup all‑purpose flour

  • ¼ cup light brown sugar

  • ¼ cup granulated sugar

  • ½ teaspoon ground cinnamon

  • 3 tablespoons unsalted butter, melted

Muffins

  • 2 cups all‑purpose flour

  • 1¼ teaspoons baking powder

  • 1½ teaspoons ground cinnamon

  • ½ teaspoon salt

  • ½ cup unsalted butter, room temperature

  • ½ cup packed light brown sugar

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • ¼ cup whole milk

  • 1½ cups diced apple (about 2 peeled, cored apples)

Direction

Make the Topping

  1. Stir brown sugar, flour, granulated sugar, and cinnamon together in a medium bowl.

  2. Add melted butter and mix with a fork until clumpy. Set aside.

Make the Muffins

  1. Preheat oven to 400°F. Grease or line a 12‑cup muffin pan.

  2. Whisk flour, baking powder, cinnamon, and salt in a medium bowl.

  3. Toss diced apples with 2 tablespoons of the flour mixture; set aside.

  4. In a large bowl, beat butter and both sugars until creamy (about 2 minutes).

  5. Add eggs one at a time, then vanilla.

  6. On low speed, add one‑third of the flour mixture, then half the milk.

  7. Repeat, ending with flour. Mix just until combined.

  8. Fold in the apples.

  9. Divide batter into muffin cups (about ⅓ cup each).

  10. Sprinkle 2–3 tablespoons topping over each muffin.

  11. Bake 10 minutes, then reduce oven to 350°F and bake 12–15 minutes more, until a toothpick comes out with a few moist crumbs.

  12. Cool in pan 10 minutes, then transfer to a wire rack.

Notes

  • The initial high heat helps muffins rise tall; lowering the temperature prevents burning.

  • Cool muffins out of the pan to avoid steaming and sogginess.

  • Use sweet‑tart apples like Honeycrisp, Fuji, or Gala for best flavor.

  • Muffins stay fresh in an airtight container for up to 3 days.
