Blueberry Pie - Quick & Easy Recipe

Crust

  • 1 recipe homemade pie crust (or 2 store‑bought)

Blueberry Filling

  • 6 cups fresh blueberries

  • 1 tablespoon lemon zest (optional)

  • 3 tablespoons fresh lemon juice

  • ⅔ cup granulated sugar

  • 5 tablespoons cornstarch

  • Pinch of salt

Finish

  • 2 tablespoons butter, diced

  • 1 large egg, beaten with 2 teaspoons water (egg wash)


Direction

Prep 

1. Preheat

  • Set oven to 425°F.

2. Roll the Bottom Crust

  • On a lightly floured surface, roll one disk of pie dough into a 13‑inch circle.

  • Transfer to a 9‑inch pie pan, letting excess dough hang over the edges.

Blueberry Filling

3. Mix the Berries

  • In a large mixing bowl, combine blueberries, lemon zest, and lemon juice.

  • Add sugar, cornstarch, and salt.

  • Stir until berries are evenly coated.

4. Fill the Pie

  • Pour the blueberry filling into the prepared crust.

  • Pat into an even layer.

  • Dot the top with diced butter.

Add the Lattice Top

5. Roll the Top Crust

  • Roll the remaining pie dough into a 12‑inch circle.

  • Cut into 10–12 strips, about 1 inch wide, using a pastry wheel or knife.

6. Weave the Lattice

  • Arrange strips over the pie, weaving them over and under to form a lattice.

  • Trim excess dough from both crusts, leaving about 1 inch of overhang.

  • Tuck the excess under and crimp the edges.

7. Egg Wash

  • Brush the lattice and edges with egg wash.

  • Sprinkle with sugar if desired.

  • Place the pie on a rimmed baking sheet.

Bake the Pie

8. First Bake

  • Bake at 425°F for 20 minutes.

9. Reduce Heat

  • Lower oven temperature to 350°F.

  • Bake 35–45 minutes, until the crust is deep golden brown and the filling bubbles around the edges.

10. Protect the Crust

  • Tent the entire pie or just the edges with foil if browning too quickly.

Cool Completely

11. Cool Down

  • Let the pie cool completely for about 4 hours before slicing.
