Tool

  • Mixer

Ingredients

  • 2½ cups bread flour

  • ¾ cup all-purpose flour

  • 2 tablespoons granulated sugar

  • 2¼ teaspoons instant yeast (1 packet)

  • 1½ teaspoons salt

  • ¾ cup warm milk (110–120°F)

  • 2 large eggs

  • 4 tablespoons unsalted butter, room temperature

  • Egg wash (1 egg + 1 tablespoon water or milk)

Direction

Make the Dough

  1. In the bowl of a stand mixer fitted with the dough hook, whisk together bread flour, all-purpose flour, sugar, yeast, and salt.

  2. Add warm milk and eggs. Mix on low until dough comes together, about 2 minutes.

  3. Add butter ½ tablespoon at a time, waiting for each piece to fully incorporate.

  4. Continue kneading 10 minutes until dough is elastic and tacky (soft, sticky to the touch but does not stick to a clean finger).

  5. Lightly oil a large bowl. Place dough inside, turn once to coat, and pat into an even layer.

  6. Cover and rise in a warm spot 45 minutes–1 hour, until doubled.

Shape the Buns

  1. Line a baking sheet with parchment or a silicone mat.

  2. Lightly flour your surface and turn out the dough.

  3. Press into an even circle and cut into 8 pieces (about 100g each).

  4. Pull edges of each piece toward the center and pinch to form a ball.

  5. Flip seam‑side down and gently round with your hands (no need for tight shaping).

  6. Place on the baking sheet, spaced apart, and flatten each to 3 inches wide.

  7. Cover and rise 30–40 minutes, until doubled.

Bake

  1. Preheat oven to 400°F.

  2. Brush tops lightly with egg wash.

  3. Bake 12–15 minutes, rotating the pan halfway through, until golden brown.

  4. Cool completely before slicing.

  5. Store in an airtight container up to 3 days, or freeze up to 3 months.

Notes

  • Milk temperature matters: 110–120°F activates yeast; hotter than 130°F can kill it.

  • Seeded buns: Add sesame, poppy, or everything seasoning after egg wash.
