Fun History
This style of multi‑layer chocolate cake with mousse, cheesecake filling, and ganache is rooted in American celebration cakes, especially popular in modern U.S. baking culture. It reflects the American tradition of rich, multi‑texture party cakes.
INGREDIENTS
Chocolate Cake
½ cup baking cocoa
1 cup boiling water
½ cup butter, softened
1 cup sugar
2 large eggs, room temperature
¾ tsp vanilla extract
1⅓ cups all-purpose flour
1 tsp baking soda
¼ tsp baking powder
¼ tsp salt
Chocolate Cheesecake Layer
4 oz cream cheese, softened
¼ cup confectioners’ sugar
½ tsp vanilla extract
½ cup dark chocolate chips, melted and cooled
½ cup heavy whipping cream
White Chocolate Mousse
1 cup heavy whipping cream
2 Tbsp sugar
3 oz cream cheese, softened
3 oz white baking chocolate, melted and cooled
Ganache
3 cups semisweet chocolate chips
1½ cups heavy whipping cream
Garnish
2 cups miniature semisweet chocolate chips
¼ cup white baking chips, melted
DIRECTION
Bake the Chocolate Cake
Preheat oven to 350°F. Combine cocoa and boiling water; let cool completely. Cream butter and sugar until light and fluffy, 5–7 minutes.
Add eggs one at a time; beat in vanilla. Whisk flour, baking soda, baking powder, and salt. Add dry ingredients to creamed mixture alternately with cooled cocoa mixture, beating well after each addition.
Pour into a greased, parchment‑lined 9‑inch round pan. Bake 25–30 minutes, until a toothpick comes out clean. Cool 10 minutes; remove to a wire rack to cool completely.
Make the Chocolate Cheesecake Layer
Beat cream cheese, confectioners’ sugar, and vanilla until smooth. Beat in cooled melted dark chocolate. In another bowl, beat cream to soft peaks; fold into chocolate mixture. Place cooled cake layer in the bottom of a 9‑inch springform pan. Spread chocolate cheesecake evenly over the cake. Refrigerate 1 hour.
Make the White Chocolate Mousse
Beat cream until it begins to thicken; gradually add sugar and beat to stiff peaks. In another bowl, beat cream cheese until fluffy. Add melted white chocolate; beat until smooth. Fold in whipped cream.
Spread mousse over the chocolate cheesecake layer. Refrigerate 1 hour, until set.
Make the Ganache
Place chocolate chips in a large bowl. Heat cream in a saucepan until just boiling; pour over chocolate. Whisk until smooth. Cool slightly, stirring occasionally. Reserve ¾ cup for piping; cover and refrigerate until cold.
Finish the Cake
Remove cake from springform pan; place on a wire rack. Pour remaining ganache over the cake, letting it coat the sides. Press miniature chocolate chips into the sides. Drizzle melted white baking chips over the top. Refrigerate, covered, until fully chilled.
Beat reserved ganache for 15 seconds until piping consistency; pipe around the top edge. Refrigerate until serving.
