Wet Ingredients
2 large eggs
½ cup 2% milk
5 Tbsp canola oil
2 tsp vanilla extract
1 tsp white vinegar
½ cup chilled club soda
Dry Ingredients
1½ cups all‑purpose flour
½ cup cornstarch
1 tsp baking powder
½ tsp baking soda
½ tsp salt
2 Tbsp sugar
Optional Toppings
Butter
Maple syrup
Directions
1. Prepare the Egg Whites Separate the eggs. Place the egg whites in a clean, dry bowl and let them stand at room temperature for 30 minutes.
2. Mix the Dry Ingredients In a separate bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt.
3. Mix the Wet Ingredients In a small bowl, whisk the egg yolks, milk, canola oil, vanilla, and vinegar until well blended.
4. Beat the Egg Whites Beat the egg whites until soft peaks form. Gradually add the sugar and continue beating until stiff peaks form.
5. Preheat the Waffle Maker Heat your waffle maker according to the manufacturer’s instructions.
6. Combine the Batter Stir together the dry mixture, the egg yolk mixture, and the chilled club soda just until combined — do not overmix. Gently fold the beaten egg whites into the batter to keep it light and airy.
7. Cook the Waffles Pour the batter into the preheated waffle maker and cook until the waffles are golden brown.
8. Serve - serve warm with butter and maple syrup, if desired.
