Meatloaf Base

  • 2 large eggs, beaten

  • ⅓ cup 2% milk

  • 1½ cups shredded cheddar cheese

  • 1 sleeve Ritz crackers (30 crackers), crushed

  • ½ cup finely chopped onion

  • ½ cup finely chopped green pepper

  • ½ tsp salt

  • ¼ tsp garlic powder

  • ¼ tsp pepper

  • 2 lbs ground beef

Glaze

  • ½ cup ketchup

  • 3 Tbsp brown sugar

  • 2 tsp Dijon or yellow mustard


Directions

1. Prep the Oven Preheat oven to 350°F.

2. Build the Meatloaf Mixture In a large bowl, combine the eggs, milk, cheddar cheese, crushed Ritz crackers, onion, green pepper, salt, garlic powder, and pepper. Crumble the ground beef over the mixture and mix lightly but thoroughly.

3. Shape & Bake Shape into a 5×10‑inch loaf and place in an ungreased 13×9‑inch baking dish. Bake, uncovered, for 50 minutes.

4. Make the Glaze Meanwhile, in a small bowl, combine the ketchup, brown sugar, and mustard.

5. Glaze & Finish Baking Spoon the glaze over the meatloaf. Bake until a thermometer reads 160°F, 10–15 minutes longer.

6. Rest & Slice Let the meatloaf stand for 10 minutes before slicing.
