1 lb bacon, chopped
8 medium potatoes (about 3 lbs), peeled and cut into ½‑inch pieces
1 large onion, chopped
Seasoning
1 tsp salt
½ tsp pepper
Directions
1. Cook the Bacon In a large skillet, cook the chopped bacon over medium‑low heat until crisp. Remove the bacon with a slotted spoon and drain on paper towels.
2. Reserve the Drippings Carefully pour the bacon drippings from the skillet into a heat‑safe container. You’ll use these to cook the potatoes.
3. Cook the Potatoes & Onions Working in batches, return ¼ cup of the bacon drippings to the skillet. Add the potatoes, onion, salt, and pepper; toss to coat evenly. Cook over medium‑low heat, stirring occasionally, until the potatoes are golden brown and tender, about 15–20 minutes. Add more drippings as needed to prevent sticking and to enhance browning.
4. Finish the Dish Stir the cooked bacon back into the skillet. Serve immediately while hot and crisp.
