⅓ cup red wine vinegar
3 Tbsp honey
1 chipotle pepper in adobo sauce
1½ tsp adobo sauce
1 tsp garlic powder
1 tsp ground cumin
¾ tsp salt
½ tsp dried oregano
¼ tsp pepper
Oil
½ cup extra‑virgin olive oil
Directions
1. Blend the Base In a blender or food processor, combine the red wine vinegar, honey, chipotle pepper, adobo sauce, garlic powder, cumin, salt, oregano, and pepper. Purée until completely smooth.
2. Add the Oil With the motor running, slowly drizzle in the olive oil until the vinaigrette is fully emulsified and silky.
