Tool
Small pot
Whisk
Mason jar
Ingredients
1 cup heavy cream
½ cup granulated sugar
¼ teaspoon salt (optional)
½ cup unsalted butter
6 ounces semi‑sweet or bittersweet chocolate, finely chopped
¼ cup unsweetened natural cocoa powder
1 teaspoon vanilla extract
Direction
Add the cream, sugar, salt, and butter to a small pot. Heat over medium, stirring frequently until the butter melts and the mixture begins to simmer.
Simmer for just under a minute, then reduce heat to medium‑low. Add the chopped chocolate and stir until fully melted.
Remove from heat and whisk in the cocoa powder and vanilla. Return to low heat and cook for about 30 seconds until glossy and smooth.
Transfer to a mason jar and refrigerate. Reheat gently over medium‑low heat when ready to serve.
Notes
Softer fudge: Add ¼ cup light corn syrup at the beginning for extra gloss and softness.
Unsalted butter: Gives you full control over salt levels.
Low heat only: Chocolate and cocoa burn easily.
Thickening: Sauce thickens naturally as it cools.
Sweeter fudge: Use chocolate with 60–70% cacao or semisweet chips.
