Key Lime Pie - Quick & Easy Recipe

Ingredient
Crust
1½ cups graham cracker crumbs
6 to 8 tablespoons unsalted butter, melted, divided
¼ cup granulated sugar
Filling
2 cans sweetened condensed milk (14 oz)
¾ cup key lime juice
4 egg yolks
2 teaspoons lime or key lime zest
Topping
1 cup heavy cream
3 tablespoons powdered sugar
1 teaspoon vanilla extract
Optional: Lime zest and thinly sliced key limes for garnish
Direction
Crust
1. Preheat
Heat oven to 350°F.
2. Mix the Crumbs
In a medium bowl, stir together graham cracker crumbs, 6 tablespoons melted butter, and sugar.
Pinch the mixture between your fingers:
If it sticks together, it’s ready.
If it falls apart and feels sandy, add more melted butter 1 tablespoon at a time.
3. Press the Crust
Add the crumb mixture to the 9‑inch pie plate.
Use the flat bottom of a measuring cup or glass to press the crumbs firmly into the bottom and up the sides.
Slightly mound the edges above the rim.
Bake for 10 minutes, until dry and golden.
Filling
4. Mix the Filling
In a large bowl, whisk together sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth.
5. Fill & Bake
Pour the filling into the warm crust.
Give the pie a gentle jiggle to level the surface.
Bake at 350°F for about 10 minutes.
Cool on a wire rack for 20 minutes, then chill for at least 1 hour.
The pie will have tiny holes and a slight jiggle when done — that’s perfect.
6. Chill Your Mixing Tools
Place a large mixing bowl (or stand mixer bowl) and the beaters/whisk attachment in the fridge or freezer for 20 minutes.
Topping
7. Whip the Cream
In the chilled bowl, combine heavy cream, powdered sugar, and vanilla.
Beat on medium speed until frothy and beginning to thicken (about 2 minutes).
Increase to medium‑high and beat until soft to medium peaks form (1–2 more minutes).
8. Finish the Pie
Top with dollops of whipped cream.
Add lime zest and thin slices if you like.
Serve chilled.
