Key Lime Pie - Quick & Easy Recipe

Ingredient

Crust

  • 1½ cups graham cracker crumbs

  • 6 to 8 tablespoons unsalted butter, melted, divided

  • ¼ cup granulated sugar

Filling

  • 2 cans sweetened condensed milk (14 oz)

  • ¾ cup key lime juice

  • 4 egg yolks

  • 2 teaspoons lime or key lime zest

Topping

  • 1 cup heavy cream

  • 3 tablespoons powdered sugar

  • 1 teaspoon vanilla extract

  • Optional: Lime zest and thinly sliced key limes for garnish


Direction

Crust

1. Preheat

  • Heat oven to 350°F.

2. Mix the Crumbs

  • In a medium bowl, stir together graham cracker crumbs, 6 tablespoons melted butter, and sugar.

  • Pinch the mixture between your fingers:

    • If it sticks together, it’s ready.

    • If it falls apart and feels sandy, add more melted butter 1 tablespoon at a time.

3. Press the Crust

  • Add the crumb mixture to the 9‑inch pie plate.

  • Use the flat bottom of a measuring cup or glass to press the crumbs firmly into the bottom and up the sides.

  • Slightly mound the edges above the rim.

  • Bake for 10 minutes, until dry and golden.

Filling

4. Mix the Filling

  • In a large bowl, whisk together sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth.

5. Fill & Bake

  • Pour the filling into the warm crust.

  • Give the pie a gentle jiggle to level the surface.

  • Bake at 350°F for about 10 minutes.

  • Cool on a wire rack for 20 minutes, then chill for at least 1 hour.

  • The pie will have tiny holes and a slight jiggle when done — that’s perfect.

6. Chill Your Mixing Tools

  • Place a large mixing bowl (or stand mixer bowl) and the beaters/whisk attachment in the fridge or freezer for 20 minutes.

Topping

7. Whip the Cream

  • In the chilled bowl, combine heavy cream, powdered sugar, and vanilla.

  • Beat on medium speed until frothy and beginning to thicken (about 2 minutes).

  • Increase to medium‑high and beat until soft to medium peaks form (1–2 more minutes).

8. Finish the Pie

  • Top with dollops of whipped cream.

  • Add lime zest and thin slices if you like.

  • Serve chilled.
