Ingredient

Seasoned Flour Mix

  • 4 cups all‑purpose flour, divided

  • 2 Tbsp garlic salt

  • 1 Tbsp paprika

  • 3 tsp pepper, divided

  • 2½ tsp poultry seasoning

Wet Batter

  • 2 large eggs

  • 1½ cups water

  • 1 tsp salt

Chicken

  • 2 broiler/fryer chickens (3½–4 lbs. each), cut up

For Frying

  • Oil for deep‑fat frying

Directions

1. Prepare the Seasoned Flour & Batter In a large shallow dish, combine 2⅔ cups flour, garlic salt, paprika, 2½ tsp pepper, and poultry seasoning. In another shallow dish, beat the eggs and 1½ cups water; whisk in the salt, the remaining 1⅓ cups flour, and ½ tsp pepper to form a smooth batter.

2. Coat the Chicken Dip chicken pieces into the egg batter, then transfer to the seasoned flour mixture, a few pieces at a time. Turn to coat thoroughly, pressing lightly so the breading adheres.

3. Fry the Chicken Heat oil in a deep‑fat fryer to 375°F. Fry chicken, several pieces at a time, until golden brown and juices run clear, about 7–8 minutes per side. Drain on paper towels.
