Fried Lasagna - Quick & Easy Recipe

Lasagna Base
20 uncooked lasagna noodles
1 carton (32 oz) whole‑milk ricotta cheese
2½ cups shredded Italian cheese blend, divided
2 cups shredded part‑skim mozzarella cheese
6 large eggs, beaten and divided
4 tsp Italian seasoning, divided
Salt and pepper to taste
Breading & Frying
Oil for deep‑fat frying
2½ cups panko breadcrumbs
Serving Sauces
1 jar (24 oz) marinara sauce, warmed
1 jar (15 oz) Alfredo sauce, warmed
Direction
Cook and Prepare the Noodles Cook the lasagna noodles according to the package directions until al dente, then drain well. If desired, trim off the ribboned edges and discard or reserve them for another use.
Make the Filling In a large bowl, combine the ricotta, 1½ cups Italian cheese blend, mozzarella, 2 eggs, and 3 teaspoons Italian seasoning, mixing until smooth.
Fill and Fold the Noodles Spread about ¼ cup of filling onto each noodle, then starting from a short end, fold each noodle into thirds to form a compact bundle. Place the bundles seam‑side down on a parchment‑lined baking sheet and freeze until just firm, about 1 hour.
Prepare the Breading Heat the oil in an electric skillet or deep fryer to 375°F. In a shallow bowl, combine the panko breadcrumbs, 2 cups Italian cheese blend, and the remaining 1 teaspoon Italian seasoning. Place the remaining 4 eggs in a separate shallow bowl.
Bread the Bundles Dip each chilled lasagna bundle into the eggs, then coat it in the breadcrumb mixture, pressing gently to help the coating adhere.
Fry - fry the bundles in batches until golden brown, about 8–10 minutes, turning once halfway through, then drain on paper towels.
Serve - serve the warm bundles with marinara sauce, Alfredo sauce, the remaining Italian cheese blend, and additional Italian seasoning if desired.
