Tool

  • 9×13-inch or 3‑quart baking dish

Ingredients

For the Peach Filling

  • 7 tablespoons unsalted butter

  • 6 large ripe yellow peaches

  • ¼ cup packed light brown sugar

  • ¼ cup granulated sugar

For the Cobbler Batter

  • 1 cup all-purpose flour

  • ¾ cup granulated sugar

  • 2 teaspoons baking powder

  • ½ teaspoon cinnamon

  • ¼ teaspoon salt

  • ¾ cup whole milk

Direction

  1. Filling Heat the oven to 375°F (190°C). Cut the butter into pieces, place them in a 9×13-inch baking dish, and warm the dish in the oven until the butter melts, about 5 minutes. Remove and set aside. Peel the peaches, slice them in half, remove the pits, then cut into ¼‑inch slices. Add them to a large skillet. Sprinkle the brown sugar and granulated sugar over the peaches and stir to coat. Cook over medium heat, stirring occasionally, just until the sugars dissolve and the peaches release their juices. Remove from heat.

  2. Batter & Assembly In a large bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon. Pour in the milk and stir until just combined. Pour the batter into the baking dish with the melted butter. Gently spread it toward the edges without mixing it into the butter. Spoon the peaches and their juices evenly over the batter, leaving a few open spots so the topping can rise through.

  3. Bake - Bake for 40–45 minutes, until the cobbler is golden brown and springs back lightly when touched. Let cool briefly before serving.

Notes

  • Keep the peaches slightly firm. The stovetop step should be brief—just long enough for the sugar to melt. The peaches will soften fully in the oven, and cooking them too long beforehand can make the final cobbler mushy.

  • Choose the baking dish that suits your needs. This recipe works in a 9×13-inch pan, any 3‑quart baking dish, two 8×8-inch pans, or individual 8‑ounce ramekins. Baking time may vary depending on how deep the batter sits in the dish, so watch for a golden top and bubbling juices to know it’s ready.
