Direction
Prep the Pineapple
Wash the pineapple thoroughly and pat dry.
Cut the pineapple in half from bottom to crown.
If using the shell for serving, keep the crown attached.
Carefully cut around the inside, then cut across to form cubes.
Scoop out the flesh with a spoon.
Blend the pineapple flesh and strain the juice.
Set aside ½ cup of juice for the rice.
Cook the Rice
Place washed rice in a pot.
Add chicken stock, pineapple juice, water, and salt.
Cook until soft.
Fluff and set aside to cool completely.
Prep the Veggies
Chop carrots, bell peppers, green beans, and any additional veggies.
Set aside.
Cook the Shrimp
Season shrimp with the shrimp spice mix.
Heat oil in a large pan or wok.
Fry shrimp 2–3 minutes until pink.
Remove and set aside.
Stir‑Fry Everything
In the same pan, add chopped onions, ginger, and garlic.
Fry until fragrant.
Add chopped vegetables and veggie spice mix.
Stir‑fry 5 minutes.
Add cooked rice, fried shrimp, and scallions.
Stir‑fry everything together for about 5 minutes.
Serve hot — in a bowl or inside the pineapple shell for a beautiful finish.
Notes
Rinse rice until water runs clear to remove excess starch.
Use completely cooled rice for the best fried‑rice texture.
Fry rice for at least 5 minutes to reduce moisture and improve shelf life.
A wok cooks evenly and makes tossing easier.
Cut veggies evenly so they cook at the same time; keep them slightly crunchy.
Add diced liver or gizzard for a classic Nigerian party‑style twist.
