Quesadilla burger - Quick & Easy Recipe

Beef Filling

  • 1 lb ground beef

  • ¾ tsp salt

  • ¼ tsp pepper

  • 1 Tbsp canola oil

Cheeses

  • 4 slices pepper jack cheese

  • 2 cups shredded cheddar cheese

Tortillas

  • 8 mini flour tortillas

Toppings

  • 4 cooked bacon strips, halved

  • 4 lettuce leaves

  • ½ cup chipotle ranch dressing

  • ½ cup pico de gallo


Directions

1. Cook the Beef Patties Shape the ground beef into four 5‑inch‑wide patties. Season both sides with salt and pepper. Heat the canola oil in a large skillet over medium heat. Add the patties and cook 4–6 minutes per side, or until a thermometer reads 160°F. Remove from heat, top each patty with pepper jack cheese, cover, and let stand 5 minutes to melt.

2. Melt the Cheddar on the Tortillas Place the mini flour tortillas on a griddle. Sprinkle ¼ cup shredded cheddar onto each tortilla. Cook over low heat for 1–2 minutes, just until the cheese melts. Remove from heat.

3. Assemble the Tacos Top half of the tortillas with a beef patty, a piece of bacon, a lettuce leaf, chipotle ranch dressing, and pico de gallo. Finish by placing the remaining tortillas on top, cheese side down, to form mini taco melts.
