Tool

  • Medium pot

  • Candy thermometer

Ingredients

  • 2 lbs strawberries, halved

  • 1¼ cups granulated sugar

  • 2 tablespoons lemon juice

Direction

Prep the Strawberries

  • Wash, hull, and roughly chop strawberries.

Cook the Jam

  • Add strawberries, sugar, and lemon juice to a large pot.

  • Heat over medium‑high, stirring frequently.

  • Bring to a boil, then reduce to medium‑low to maintain a steady simmer.

  • Simmer about 45 minutes, stirring often, until thick and syrupy and the mixture reaches 220°F on a candy thermometer.

Check Consistency

  • Drop a small amount onto a frozen plate.

  • Freeze for a few minutes, then check thickness.

  • Continue simmering if needed until desired consistency is reached.

Finish

  • Pour jam into a mason jar.

  • Chill overnight.

  • Serve on French bread or scones.

Notes

  • Choose red, fragrant, very ripe strawberries for best flavor.

  • Add lemon zest for extra brightness, or herbs (basil, mint, thyme, lavender) for an herbal twist.

  • Stir frequently to prevent burning.

  • Mash larger pieces with a potato masher, or pulse berries before cooking for smoother jam.

  • Sterilize jars using boiling water or a dishwasher sterilize cycle to extend shelf life.
