Tool

  • Mixing bowl

Ingredients

  • 3 tablespoons kosher salt

  • 2 teaspoons dried thyme

  • 2 teaspoons dried rosemary

  • 2 teaspoons dried sage

  • 2 teaspoons ground black pepper

  • 1½ teaspoons garlic powder

  • 1½ teaspoons onion powder

  • 1 teaspoon paprika

Direction

  1. In a small bowl, combine the salt, thyme, rosemary, sage, black pepper, garlic powder, onion powder, and paprika.

  2. To season a turkey: Brush a 12–15 lb turkey with olive oil or melted butter, then sprinkle the seasoning blend all over.

  3. Let the turkey rest at room temperature for 1 hour before roasting.

Notes

  • Use fresh seasonings: Old dried herbs lose potency, so check expiration dates.

  • Swap fresh herbs: You can use fresh thyme, rosemary, and sage — double the amount, but note the mix will not be pantry‑safe.

  • Prep the turkey well: Coat generously with 4–6 tablespoons of olive oil or melted butter so the seasoning adheres and the skin browns beautifully.

  • Make ahead: Mix up to 3 months in advance and store airtight at room temperature.

  • Optional variations:

    • Add 1–2 tablespoons brown sugar for sweetness.

    • Use red or white peppercorns for floral pepper notes.
