Homemade Granola
2 cups old‑fashioned oats
½ cup pecan halves
½ cup sliced almonds
¼ cup sunflower kernels
½ cup packed brown sugar
½ tsp salt
¼ cup butter, cubed
¼ cup honey
½ tsp ground cinnamon
1 tsp vanilla extract
½ cup dried cherries
½ cup dried blueberries
Parfaits
2 cups fresh blueberries
2 cups fresh raspberries
2 cups chopped fresh strawberries
4 cups honey Greek yogurt
Direction
1. Make the Granola Base Preheat oven to 350°F. In a large bowl, combine the oats, pecans, almonds, sunflower kernels, brown sugar, and salt.
2. Cook the Honey Butter Mixture In a small saucepan, heat the butter, honey, and cinnamon over medium heat for 3–4 minutes, stirring until fully blended. Remove from heat and stir in the vanilla.
3. Coat the Oat Mixture Pour the warm honey‑butter mixture over the oat mixture. Stir well to coat everything evenly.
4. Bake the Granola Spread the mixture evenly into a greased 15×10×1‑inch baking pan. Bake for 35–40 minutes, stirring every 10 minutes, until crisp and dark golden brown. Cool completely on a wire rack.
5. Add the Dried Fruit Once cooled, stir in the dried cherries and dried blueberries.
6. Prepare the Berry Mix In a small bowl, combine the fresh blueberries, raspberries, and chopped strawberries.
7. Assemble the Parfaits In 8 parfait glasses, layer:
¼ cup berries
¼ cup honey Greek yogurt
¼ cup granola
Repeat the layers, then top each parfait with the remaining berries.
